I am currently working as a Research Assistant for the project: Co-design, development and evaluation of the KIDNEY BEAM-KIDS platform for paediatric kidney transplant recipients: a feasibility study. The project is a mixed-method, multi-centre clinical trial with participating NHS sites in Scotland, England, and Northern Ireland.
I have over 10 years of experience supporting academia and healthcare in a variety of roles. As an undergraduate research assistant, I was involved with a project studying the use of Ecological Momentary Assessment (EMA) methodologies to monitor appetite and stress in free-living adults.
While working on my MSc at the University of Hawaii at Manoa, I supported the Department of Human Nutrition, Food and Animal Science as a teaching and research assistant. In addition to my own master’s research, I collaborated with the Hawaii Department of Health and the Centers for Disease Control and Prevention to analyze health surveillance data in the United States to develop targeted interventions and improve support programs.
As a dietitian, I specialize in paediatric therapeutic menus, focusing on renal, carbohydrate-controlled, and allergen-free menu plans for schools. I also have extensive experience providing clinical and organizational support to diverse hospital departments, including nutrition and food service, A&E, critical care, day surgery, COVID-19, and maternity.
My research has focused on the health management of individuals with chronic disease or other conditions which increase vulnerability and support needs. I aim to expand interventions and support to improve health outcomes and quality of life.

As a Teaching Assistant at the University of Hawaii at Manoa (UHM), I contributed to teaching and marking in nutrition assessment, medical nutrition therapy, community nutrition, nutrition counselling and education, and food preparation. I have led special lecture and food preparation laboratory courses for visiting international students at UHM and developed and led a nutrition education course for children attending summer day camp.
